Cut the plums in half and fill each with a peeled almond. Place each with the open side down on round baking sheets. Beat egg whites and sugar until firm and mix with grated dark chocolate. Fill a piping bag with the mixture and pipe it in a spiral over the filled plums until they are completely covered.
Carefully bake the chimney sweeps at a low temperature until they brown on the surface.
