For the pumpkin seed spread, dry roast the pumpkin seeds in a pan. Cream the soft butter, stir in the curd cheese and cream cheese. Cut the shallot into very fine cubes and finely chop the pumpkin seeds.
Fold in both together with the pumpkin seed oil. Season with salt and freshly ground pepper. Garnish the pumpkin seed spread with coarsely chopped pumpkin seeds before serving.
