For the dough, mix flour, milk, a little salt and eggs well (best with a hand mixer). Rest the dough for about 10 minutes.
In the meantime preheat the oven to 50 °C.
Drain the peaches well in a sieve. Score 2 of the peach halves at short intervals (decoration), cut the remaining fruit into small cubes.
Whisk approx. 5 tbsp. milk with pudding powder and yolks. Stir the remaining milk with sugar and very little salt and bring to a boil. Pour mixed custard powder into the boiling milk, stirring continuously, and roll gently over low heat for about 1 minute.
Pour cream into a large enough bowl, stir in on the spot cottage cheese, grated lemon zest and diced peaches.
Perhaps pour the pancake batter through a sieve to remove lumps.
Bake 4 pancakes in a coated frying pan, spread with the filling, roll up and serve with chocolate sauce and the decorated peach halves.
Serve the pancakes garnished with powdered sugar and mint.
Tip: It is best to use your favorite ham – then your dish will taste twice as good!
