Cut off the stalk of the washed and dried okra and cut into pieces about 1 to 1.5 cm long. Heat ghee in a heavy frying pan or possibly in a wok, add fenugreek seeds.
Once browned, add salt, hing, turmeric and the vegetables. Stir well and do on low heat for 8 to 10 minutes with the lid closed.
Then do open on very low heat for another 10 min.
Stir in remaining ingredients and bring to table.
