Boil red wine with 2/3 of the apple juice, sugar and cinnamon. Mix cornstarch with the remaining apple juice and stir into the boiling liquid form. Bring to a boil.
Whip the egg whites until stiff, fold into the mixture, let it boil again and mix with the blackberries. Chill.
Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
