For the Schnittlebkuchen, the day before mix eggs, honey, lemon zest, gingerbread spice and sugar well with a whisk.
In between, stir again and again and cover again with a tea towel. The next day, stir or knead in flour and baking soda. Preheat the oven to 190 degrees.
Roll out the dough and place it on a baking tray covered with baking paper. Bake for about 30 minutes. After cooling, cut into cubes and store in a tin.
