For the ribbon noodles with zucchini strips, wash zucchini and cut into thin strips with a paring knife. Cook ribbon noodles in salted water according to package instructions.
Heat the olive oil in a pan and sauté the zucchini strips until they are completely collapsed. Mix with lemon juice and continue frying briefly until zucchini is lightly browned. Drain the ribbon noodles and mix well with the zucchini strips.
Season the ribbon noodles with zucchini strips with salt, serve and garnish with parsley.
