Peel the sausage and cut into cubes. Also coarsely chop shallots or green onions and drained pepperoni and mince (or blend) with sausage cubes. Finely chop the pickled cucumber or gherkins and stir in.
Add curd cheese, mayonnaise and crème fraîche or sour cream and season the spread with the remaining ingredients.
Serve the Kellergatsch in a bowl or spread it on crusty brown bread.
Garnish with pepperoni and gherkins.
