For the sheep cookies with coconut, finely grind the coconut flakes. Mix the wheat flour with baking soda. Quickly knead all ingredients into a dough. Let rest in the refrigerator for at least 1 hour. Roll out, cut out sheep and place on a greased baking tray.
Bake at 160 °C convection oven for approx. 15 minutes. Allow to cool. Brush the body of the sheep cookies with a little apricot jam and dip in coconut flakes. Melt 1 piece of cooking chocolate and apply the eyes with a toothpick.
