Preheat the oven to 220 degrees hot air.
Simply buy sausages (fine Frankfurter sausages without skin are best) and cut them into small, bite-sized pieces.Roll up the puff pastry and divide into small segments (5x5cm).Spread with mustard of your choice, place sausage pieces on top and fold the puff pastry square like a golache. Whisk an egg with some milk and a little salt, brush the puff pastry with it and sprinkle with a little caraway.
Place on a baking tray lined with baking paper and bake for about 10-12 minutes. Remove when nicely browned.
