For the mocha muffins, preheat the oven to 190 degrees and place the paper shapes in the muffin tray.
In a bowl, mix eggs, buttermilk, oil, coffee and vanilla pulp.
In a second bowl, mix flour, cocoa, sugar, baking powder, baking soda and salt. Then add the nuts and chocolate chips.
Using a pastry spatula, gently fold the wet ingredients into the flour mixture.
Pour the batter into the paper cups and bake the mocha muffins for about 20-25 minutes. Allow muffins to cool before eating.
