Mix the slightly frozen minced meat with the egg, well chilled cream, salt and herbs and cut in the also chilled food processor. Season again and use the farce as desired – for example as a filling for various strudels (lung or meat strudel) or dumplings. If the farce is used for dumplings, it is advisable to cook a sample dumpling first and correct the consistency if necessary.
