Pat carp milk dry, remove skin as desired and divide fish milk into pieces as small as desired. Beat eggs briefly in a plate. Turn carp milk first in flour, pull through eggs and roll in breadcrumbs. Heat some clarified butter with oil in a pan and fry the carp milk over not too high heat until crispy all around. Lift out, drain on kitchen paper, salt and arrange garnished with lemon wedges.
