Mix all ingredients. This dough is now still quite sticky. Nevertheless, as well as it can, form it into a ball and put it to cool for one night with the lid closed (it can be kept longer without any problems). Then it can be – with enough flour – kneaded quite well and rolled out.
Preheat the oven!
Cut the apples into thin slices, the ham into thin strips and grate the cheese. Roll out the dough thinly. Using a pastry wheel, first roll out strips of dough about 8 cm wide, then squares.
For the apple puffs, mix the sliced apples with cinnamon and sugar. Put a few pieces of apple and one or two raisins on each dough square and fold the four corners.
For the croissants, place ham and/or cheese in the center of each, roll up crosswise and bend into a crescent shape, pressing the ends together.
Brush the pieces with egg white so that everything sticks together, brush with egg yolk for a nice color.
Approximately 50 pieces will make two baking sheets. Bake each one for about 30 minutes with parchment paper on the second lowest rack at 200 °C. Serve warm and guests will be tame.
Tip: It’s best to use your favorite ham – then your dish will taste twice as good!
