A great pasta dish for any occasion:
Rinse and clean vegetables. Cook broccoli and cauliflower in salted water until tender, remove and drain. Cook penne al dente for about 7 min, drain, drain. Cut tomatoes, mozzarella into slices. Cut the cauliflower and broccoli. Butter a gratin dish and put most of the pasta in it.
Place the mixed vegetables on top and spread the remaining penne evenly on top. Mix whipped cream with eggs, salt + pepper and pour over the gratin. Cook for about 20 minutes in a heated oven at 225 °C, remove briefly, cover with mozzarella slices and bake for another 3-4 minutes. Garnish with parsley.
