Instructions:

First separate the eggs.

Melt the white chocolate at low temperature. After it has melted, let it cool a bit and stir in the cream cheese.

Gradually add the egg yolks. Stir in one third of the stiffly beaten snow with a whisk and then gently fold in the rest with a wooden spoon or pastry spatula.

Pour the batter into a greased or paper-lined springform pan (17 cm in diameter). Preheat the oven to 165 °C and bake the cake for 10 minutes.

After 10 minutes, turn the oven to 155 °C and let the cake bake for another 15 minutes. After the 15 minutes, turn off the oven and leave it in the oven for another 15 minutes.

Remove the cheesecake from the oven and let it cool.
