For the almond blossoms, mix ground almonds and both types of sugar. Press a well in the center. Pour in the flavorings and egg yolks and gently work into a smooth paste.

Wrap this paste in plastic wrap and set aside. now make the glaze. To do this, dissolve the sugar in 1 tablespoon of cold water, boil and let it caramelize slightly.

Add warm water, stir until everything has dissolved again. Let cool and stir in the egg yolks. Now roll out the almond paste to a thickness of about 5 mm and cut out flowers with a cookie cutter.

Place the flowers on a baking tray lined with baking paper and brush with the glaze. Sprinkle almond flakes on top and bake the cookies in a preheated oven at 230 °C for about 5-7 minutes.

The cookies should be lightly browned. Let the baked cookies cool on a cooling rack.
