Apple Coconut Pancakes

Instructions:

1. whisk together milk, eggs and salt. Stir in flour. Allow dough to rise for approx.

15 minutes.

2. rinse apples and remove cores. Cut apples into thin rings and sprinkle with juice of one lemon.

3. Heat 1 tsp. oil in a non-stick frying pan. Pour in a quarter of the batter and place a quarter of the apple rings on top. Bake at medium temperature for 3-4 minutes on each side until golden brown. Keep warm.

Bake 3 more pancakes with the remaining batter and apple rings as described above. Also keep warm.

Arrange pancakes on plates and sprinkle with coconut. Dust with cinnamon and powdered sugar. Garnish with lemon balm if desired. Drink: juice spritzer.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
