Cut 6 to 8 peeled Borsdorf apples or other tasty apples from which the core has been removed into quarters and boil them with a little bit of water, juice of one lemon and a little bit of clear sugar until soft and strain them through a hair sieve. 1 piece of horseradish root is cleaned, grated and mixed with the cooled applesauce together with a little bit of vinegar and salt. It is served with roast beef, game or blue boiled fish.
