Remove the skin from the apples, cut them into quarters, remove the core and cut the fruit into slices. Place in a frying pan with the white wine and cook for seven to ten minutes with the lid on.

Later, crush the fruit with the cooking liquid.

Peel the horseradish and grate finely. Immediately mix with applesauce, cream and juice of one lemon. Season the sauce with salt and freshly ground pepper. Serve lukewarm or possibly cooled.
