For the apple-nut buns, mix flour, dry yeast, salt, powdered sugar, vanilla sugar and lemon sugar.

Melt butter and mix with warm milk. Knead with egg yolks to form a rather soft yeast dough.

Cover the dough and let it rise to double its size. Mix the diced and peeled apples with powdered sugar, cinnamon and chopped walnuts.

Roll out the yeast dough and brush with melted butter. Spread the apple-nut filling on top. Roll up and cut off slices about 2 cm thick.

Place the snails on a baking tray lined with baking paper. Bake at 180 degrees for about 25 minutes. Coat the still warm apple-nut snails with cinnamon-sugar or rum-sugar glaze.
