Instructions:

For the apple-nut muffins, preheat the oven to 200 degrees and line a muffin tray with paper cups.

Mix the flour in a bowl with the baking soda, baking powder, cinnamon, salt and hazelnuts. Peel and roughly grate the apples.

Sprinkle the lemon juice over the grated apples. In a large mixing bowl, whisk the egg with the oil, honey and buttermilk.

Add the apple shavings and fold in the flour mixture. Pour the batter into the muffin tin and bake in the oven at 200 degrees for about 20 to 25 minutes.

Let the apple-nut muffins cool down and sprinkle with brittle and/ or a icing sugar-cinnamon mixture.
