Apple Pancake with Vanilla Sauce

Instructions:

1) Mix cornstarch with 1 tbsp. milk until smooth. Cut vanilla bean, scrape out pulp and boil both with 125 ml milk. Add cornstarch and let it boil. Remove the pod. Sweeten the sauce with honey.

2) Remove peel from apples, quarter and core. Cut into pieces, sprinkle with lemon.

3) Mix flour, salt and 300 ml milk until smooth. Separate eggs. Add egg yolks one by one to the dough mixture form and fold in. Whip egg whites until stiff, fold in. Maybe dry the apple pieces a little bit and stir them in.

4) Heat olive oil in batches, preferably in 2 frying pans. Pour the batter into each and bake until golden brown. Turn, bake briefly and pull apart with two forks. Remove Schmarren and dust with powdered sugar. Decorate with apple slices and mint if desired. Serve vanilla sauce separately.
