A cake recipe for all foodies:

Stir the melted butter together with the honey and the curd until it becomes a smooth cream. Add the lemon zest, the egg yolks and a good pinch of sea salt and mix well. Mix the baking powder with the flour, gradually stirring it into the curd mixture to form a smooth dough. Spread the dough on a greased baking tray and let it rest for about 15 minutes.

In the meantime, prepare the topping. Peel the apples, remove the cores and cut the flesh into thin slices. Spread the apple slices evenly on the dough, overlapping slightly, and sprinkle the raisins on top.

Preheat the oven to 160 °C. For the glaze, heat the butter, add the honey, cinnamon and whipped cream and whisk until fluffy.

Spread the glaze evenly over the apples and sprinkle the almond flakes on top. Bake the cake for about 40 minutes, cool and cut about 20 pieces on the spot.
