A cake recipe for all foodies:

(*) Cake springform pan of 26 cm ø.

Butter the cake pan and dust it with a little flour. Preheat the oven to 180 °C.

Beat the vanilla sugar, sugar, butter and lemon zest until light and fluffy. Fold in one egg at a time. Combine baking powder and flour, sift into the mixture and stir in. Pour into the prepared pan.

Remove the skin from the apples, cut them in half, remove the core and score them leafy and slightly press them apart to keep the apple mold. Place the apple halves close together on the dough with the bulge facing up. Bake the cake in the heated oven on the second rack from the bottom at 200 degrees for 60 to 70 min.

Cool slightly, then remove from the pan.

In the meantime, lightly toast the almond flakes in a dry frying pan without adding any fat. Put the apricot jam in a small pan, warm it up and spread it through a fine sieve. Brush the cake with it, then sprinkle with the flaked almonds.
