Instructions:

First separate the eggs. Mix egg yolks, powdered sugar, vanilla sugar and lemon zest until foamy. Mix in rum and flour.

Beat the egg whites with a little lemon juice until stiff (first mix the egg whites without the lemon juice). Mix the beaten egg whites into the yolk mixture. Spread the dough in a greased and floured baking pan.

Arrange the apples cut into wedges on top and sprinkle with cinnamon. Bake in the oven at medium heat. In the meantime, toast the almond flakes a little.

Mix with raw cane sugar and continue roasting. Spread over the almost baked cake and finish baking.
