Mix egg yolks and beer and add salt, flour, vanilla pulp and half of the sugar while stirring. Whip the egg whites until stiff, sifting in the sugar. Gently mix the snow with the melted butter into the dough.

Heat the frying fat to 180 °C. The easiest way to fry the dough is of course in an electric deep fryer, where you can adjust the heat exactly. However, a deep frying pan with sufficient frying fat is just as suitable. Check the heat the old-fashioned way with the handle of a wooden spoon. If small bubbles form around the base of the stem, then off with the apple slices into the fat bath.

Remove the skin from the apples and remove the core with a corer. Cut the apples into slices one centimeter thick. First turn them in flour to the other side, then dip them in the batter and bake them in the hot fat until golden brown.

Remove with a slotted spoon, drain on kitchen roll and turn while still hot in cinnamon sugar on the other side. Serve each with a scoop of vanilla ice cream.

Tip. Intensify ready-bought vanilla ice cream additionally with fresh vanilla pulp. It tastes good and makes you want to eat it.
