Instructions:

Sponge cake

Line a 24 cm cake springform pan with parchment paper, butter and flour the sides.

Beat egg yolks with sugar and lemon zest until mixture turns whitish. Beat the egg whites until stiff, then gently stir in the flour in batches. Fill the pan with the mixture and bake for about 20 minutes in the oven heated to 180 °C (second lowest rack). Remove from the mold and cool.

Cream

Bring the apple juice to the boil with the juice of one lemon and the vanilla sugar, soften the apple slices in it, then crush them. Beat the egg yolks with the sugar until the mixture turns whitish, add the mascarpone and applesauce. Whip egg whites until stiff, stir in carefully.

Tiramisu

Drizzle the sponge with the Calvados, cut into 8 pieces and line a baking dish with them. Fill with the cream and leave to cool for at least 1 hour.

Before serving, garnish with apple slices and almond kernels.
