Instructions:

Peel apples, remove core with a corer. Cut apples into 1 cm thick rings. Sprinkle with rum and juice of one lemon, sprinkle with cinnamon and sugar. Leave to soak for a while. For the batter, stir together flour, milk and egg yolks until smooth. Stir in butter, salt and sugar and flavor with rum. Beat egg whites until not too stiff and gently fold in. Heat enough oil in a deep frying pan. Pull apple rings through the batter and bake in the oil until golden brown. Remove the apple rings and drain off the fat. Sprinkle with powdered sugar. For the wine foam, stir all ingredients in a snow kettle. Beat over steam until the mixture thickens. Serve the Apfelradln with the wine mousse on plates. Garnish with cranberries.
