For the apricot jam, core the apricots and cut them into small pieces. Boil the apricot pieces with the apple juice and rum in a saucepan until soft.

After the fruit has softened, turn it into a puree with a hand blender and add the jam sugar, stirring constantly.

Test the degree of gelatinization with the plate test (put some jam on the plate and let it run down to check the viscosity).

Fill into glasses and add 1 tsp rum. Light the rum and immediately close the jar with the lid.
