For the apricot chicken curry, puree four apricots, apricot juice, fish sauce, lime juice and zest. Heat the oil in a pan.
Briefly fry the curry paste in it. Add the chicken and cook with apricot sauce for 10 minutes. Cut the remaining apricots into pieces and add.
Simmer for 1 minute. Remove from heat and add cilantro while stirring. Serve the apricot chicken curry with rice.
