For the apricots baked in lavender honey, first wash the fruit, pat dry and cut in half. Remove the seeds. Preheat the oven to 180 °C and butter a suitable ovenproof dish.

Now place the apricots in the mold with the open side facing up. If desired, place a peeled, blanched almond in each apricot half. Mix the honey with a little warm water until smooth and drizzle over the apricots. Cover each with small butter flakes and bake in a hot oven for about 15 minutes.

As soon as the apricots have turned brown, sprinkle the lavender flowers on top and bake for a few minutes more. Lift out, arrange and serve warm with the juice remaining in the mold.
