For the artichoke soup, cut the drained artichoke bottoms into small pieces and steam them in butter.

In another saucepan, stir flour into 50 g of melted butter and add good veal or chicken stock. Add whipped cream and butter to the soup, season with salt and paprika powder and add the mushy artichoke bottoms.

Fill the artichoke soup cups and sprinkle the grated hazelnuts on top.
