Arugula Salad with Pears and Parmesan – Rucola in Insalata Con Peree Parmigiano

Rinse the arugula, dry, finely shred and place in a salad bowl form. Peel the pears, cut them in half lengthwise, remove the core and cut the flesh into fine slices. Sprinkle with the juice of one lemon and add to the arugula form.

Slice the Parmesan into very thin slices and sprinkle some over the pears. Season the lettuce with salt and pepper, drizzle with the oil and mix.

Sprinkle with the remaining Parmesan cheese and bring to the table immediately.

Leaf salads should be prepared at the last minute if possible, even more so if, as in this case, they consist of raw ingredients.

Never store such a leaf salad in the refrigerator and to the table be sure to bring it at room temperature.
