For the marinade, stir salt, juice of one lemon, wine and pepper in a baking bowl. Now add the oil. Put the spring onions and goat cheese in the marinade for at least 5 hours.

Rinse the pear, cut it in half lengthwise and remove the core. Cut the pear halves into very thin slices, sprinkle them with the juice of one lemon and let them marinate for about 20 minutes. Rinse the arugula, clean and spin dry. Arrange on a large plate with the pear slices. Place the goat cheese on top and drizzle with the marinade.
