For the asado salsa, remove the peel from the onion and garlic and finely chop both. Open the peppers, remove the seeds and cut into fine strips.

Heat the oil in a frying pan. Fry the peppers, garlic and onion for about 3 minutes.

Rinse tomatoes, quarter, remove seeds and finely dice. Finely chop the spring onion.

Mix the spring onion, tomatoes, lime juice, oil, maple syrup, coriander and oregano.

Add some more flavor to the asado salsa with salt, cumin and pepper and let it sit well for some time.
