Instructions:

Blanch the pods in boiling salted water for about 2 minutes. Peel shallots, cut into strips. Peel the mango, remove the flesh from the stone and cut into slices.clean the chillies, rinse and cut into rings. Rinse the cilantro, shake dry, chop coarsely.

Season steaks with pepper & salt and roast in hot vegetable oil for 4 minutes on each side. Wrap meat in aluminum foil and rest.

Mix sunflower oil or other vegetable oil with lime juice, soy sauce, sugar, 3 tbsp water, chili and 3A of the cilantro. Cut meat into thin slices, mix with pods, shallots and mango. Add dressing and stir in. Marinate leaf salad for 10 minutes, garnish with coriander greens.

Tip: Score red chili crosswise and place in iced water for 1/2 hour. This way you get a decorative chili blossom for the leaf salad.
