For the recipe of Asian salmon with rice noodles, first prepare the rice noodles according to package instructions until al dente and strain.

Cut the onion and the chili into fine rings.

Remove enough pulp from the mango to make 2 tablespoons of finely diced mango pieces.

Wash and chop the coriander.

Mix the soy sauce with the wasabi, marinate the salmon fillets with it for about 10 minutes and then sear them in a non-stick pan over medium heat, first on the flesh side. Turn to the skin side and let cook slowly until done.

The salmon fillets are done when the color has lightened a bit throughout.

Now heat the sesame oil in a wok on high and sauté the green onion and chili until hot. Reduce the temperature and add in the mango cubes and let them caramelize slightly with the sugar.

Deglaze with 1 tablespoon of rice vinegar and leave in the wok for a bit until the salmon is ready.

Serve the Asian salmon with rice noodles immediately and garnish with the coriander.
