For the Asian style coconut fish with lemongrass rice, first prepare the rice with enough water according to package instructions. Press the lemongrass and add to the rice while it is cooking.

Season the fish fillets on both sides with salt, pepper and lime juice. Let marinate for about 15-30 minutes.

Crush garlic. Peel pineapple and cut into cubes. Roughly chop tomatoes. Remove seeds from chili and cut into fine rings. Melt some butter in a pan and fry the fish fillets with the garlic and chili in it. Add the pineapple and sugar snap peas and pour in the tomatoes. Then stir in the coconut milk and season the sauce with curry powder.

Serve the coconut fish Asian style with lemongrass rice.
