For the asparagus-potato strudel, boil and peel the potato and cut into slices, cut off the ends of the asparagus, peel if necessary, cut into small pieces and boil for 10 minutes.

Peel the eggs and cut them into small pieces. Mix the asparagus with the potatoes, eggs, olive oil, milk and spices.

Roll out the dough, spread the potato-asparagus mixture on one side, fold in the side edges and roll up the dough. Place on a baking tray covered with baking paper and bake in the oven at 180 °C for 30 minutes.

Serve with green salad.
