For the asparagus in almond breading, peel and wash the asparagus. Separate the eggs and put the whites in a deep dish. Put the grated almonds with a little salt in another plate.

Now turn the asparagus first in the egg white, then in the almonds. Preheat the oven to 200 °C and spread the asparagus on the baking paper.

Bake for 10 minutes, then turn and bake for another 10 minutes.

For the hollandaise sauce, melt the butter and whisk the egg yolks on low heat until doubled in volume. Slowly add the melted but no longer hot butter and stir until a homogeneous mixture is formed.

Season the hollandaise sauce with a dash of white wine, mustard, salt and pepper.
