For the asparagus quiche, cut the asparagus into small pieces and boil in salted water for about 10 minutes. Afterwards strain.

Then butter a quiche dish and cut the puff pastry accordingly so that you can line the quiche dish. Pull up the edges a little.

Mix the egg yolks with the sour cream and the grated cheese, season and stir in the asparagus. Empty this mixture onto the puff pastry and put the whole thing into the oven preheated to 180 degrees for about 15 minutes.

In the meantime, beat the egg whites with a little salt until stiff. After the 15-minute baking time, take the quiche out of the oven, spread the egg white evenly over the quiche and put it back in the oven for another 15 minutes.

Finally, bake for about 5-10 minutes on top heat at 200-220 degrees so that the quiche gets a nice color.
