Instructions:

First, wash and finely chop the herbs, as well as the peeled onion. Hard boil the eggs and add the yolk to the herbs. (The egg white can be used elsewhere).

Mix everything together vigorously and gradually pour in the oil, stirring vigorously all the while.

Add the remaining ingredients for the sauce, stir in and season well.

Peel the asparagus and simmer in plenty of salted water for about 15 minutes. Add the lemon juice, sugar and butter to the cooking water.

Arrange the asparagus on a plate, pour the sauce over it and serve garnished with chopped eggs and chopped cress.
