For the avocado cream with honey, beat the egg yolks with the honey in a bowl until foamy and add the low-fat curd by the spoonful.

Cut the avocados in half lengthwise, remove the stone and scrape out the flesh with a spoon. Puree with the lemon juice in a blender and mix into the curd-egg mixture.Beat the egg whites with a pinch of salt until very stiff and gently fold into the honey-avocado cream.

Wash the lemon balm and pluck the leaves. Put aside some very beautiful leaves, cut the rest into thin strips and mix into the cream.divide the avocado cream with honey on dessert bowls, garnish with the remaining lemon balm and serve immediately.
