For the azuki bean cubes, soak the beans in cold water overnight. Drain, add cold water and bring to a boil. Boil for about 3 hours until the beans are completely soft (meanwhile, repeatedly add fresh water). Strain the cooked beans and while still hot, pound them in a mortar until the shell separates from the beans. Set aside and wash agar agar in water. Tear into smaller pieces to soak for about 30 minutes and then strain.

Now bring water to a boil with a pinch of salt. Add agar agar and boil until dissolved. Strain the mixture through a cloth and boil again. Add the bean mixture along with the sugar and bring to a boil over medium heat, stirring constantly one more time.

Rinse a suitable rectangular mold with water and moisten it slightly. Pour in the bean mixture and let it set for 1 hour. Then cut into cubes and serve the azuki bean cubes.
