Instructions:

Roast melanzane in hot oven (200 °C ) until soft and lightly browned.

Cool, remove skin, squeeze out liquid. Chop very finely with a sharp kitchen knife (alternative: crush, but chopped gives a better consistency).

Mix melanzane with remaining ingredients thoroughly, arrange on small plates with parsley.
