Instructions:

Spinach actually contains a relatively large amount of iron – and many kids really like it. Because of its high nitrate content, you should always cook it fresh, otherwise carcinogenic mitrosamines could form.

Rinse the spinach, removing hard stems and wilted areas. Bring water to a boil in a medium saucepan, pour in the spinach leaves and wait for the water to bubble up again. After 1 minute of boiling, pour off and drain. Set aside about 2/3 of the leaves, and as nice as possible. Chop the rest and mix with egg yolks, cheese, long grain rice and oatmeal. Divide quantity into 4 portions. Arrange the leaves into 4 large rectangles, divide the quantity evenly and roll up, closing at the ends. Warm the rolls in milk with whipped cream and serve on the spot.
