Instructions:

Pour the flour into a large bowl. Make a well in the center. Stir yeast with 5 tbsp. warm water and pour into the flour well. Sprinkle with sugar. Let dampfl rise in a warm place for about 15 minutes. Cut bacon into cubes and fry until crisp. Cool. Put 1 tablespoon of bacon cubes aside.

Add remaining bacon fat, bacon dice, sourdough, 450 ml lukewarm water and salt to the dampfl form. Knead heartily with the dough hooks. Let bread dough rise for 30 minutes. Knead again and shape into a round loaf. Place on a greased baking sheet and rise for 30 min.

Brush with lukewarm water and sprinkle with remaining bacon cubes. Bake in a heated oven at 200 °C for about 1 hour. Put a mug of water on the stove. Makes about 20 slices.
