A cake recipe for all foodies:

Base: beat the eggs with sugar until thick and creamy, stir with melted butter and add to the egg mixture form with the flour and baking powder.

Finally, add 2 tablespoons of whipped cream. Pour the dough into a greased springform pan and bake in a convection oven at 200 °C for 15 minutes.

With normal bottom and top heat, the baking time is increased by about 5 to 10 min. Cool.

Topping: First remove the skin from the apples, core them, divide them into eighths and steam them in white wine with a little sugar and vanilla sugar until soft. If you don’t like wine, you can also use water or apple juice. Thicken with pudding powder. Refrigerate.

Next, whip the sweet whipped cream, carefully mix with baked apple yogurt and sour whipped cream and thicken with gelatin (according to package directions). This quantity must also be left to cool until it begins to stiffen.

Finally, briefly brown the almond kernels in butter and vanilla sugar in a frying pan and fold into the apple mixture together with the raisins. Reserve a little for the decoration.

Then layer the cake: Spread the apple mixture on the cooled base, smooth the whipped yogurt cream on top and refrigerate for 2 to 3 hours.

Just before serving, garnish each with your choice of browned almonds, raisins and reserved apple pieces.
