Instructions:

For baked apple slices, first prepare the beer batter. For the beer, mix the sifted flour with the salt, sugar and beer until smooth.

Add the egg yolks and the lukewarm butter. Let it rest in a warm place for about half an hour. Whip the egg whites until stiff and fold them in carefully.

Peel the apples and remove the core with an apple corer. Cut the uncut apples into 1 cm slices and drizzle with the juice of one lemon to prevent them from turning brown.

Marinate the apple slices with rum, sugar and a tiny bit of cinnamon, if desired. Heat the clarified butter to about 180 degrees.

Pull the apple slices through the batter and place them in the hot clarified butter. As soon as the side in the fat turns golden brown, carefully turn the apple slices to the other side.

Place the baked apple slices on paper towels to soak up excess fat. Turn to the other side in the cinnamon sugar.

Whip the whipped cream until semi-stiff, adding the sugar and rum. Arrange the apple slices with the rum cream.
